cauliflower tortillas

Cauliflower has become sort of an obsession
of ours lately in the kitchen. Can you blame us?
It's such a diverse vegetable, and after the
craze of Paleo, more and more recipes have
surfaced using cauliflower as a substitue for
many carb-heavy foods.

We have tried a lot of them, some successfully
and some we are still working out the kinks of.
But this cauliflower tortilla recipe, we nailed the first
try, and we were so surprised by how good
they tasted (and truthfully how well they stayed together).

They may not LOOK very pretty,
but don't let that fool you from the taste.

You will need:

1 a head of cauliflower riced or
2 cups riced and packed
2 eggs
salt and pepper to taste

Before you begin, start by
preheating the oven to 375 degrees and line a baking tray with parchment paper.
Also, chop up your cauliflower, or follow the instructions on your
package, and steam.

images via google image

If you did not but the already-riced cauliflower
packaged,  place your head of chopped cauliflower in a
food processor and rice
. (Once it's riced measure it to make sure you have 2 cups packed.)
Place riced cauliflower in bowl and microwave for 2
minutes and stir, then another two minutes and stir again then
place in a dish towel and squeeze excess water out as hard as you can.
You want to remove as MUCH water as possible.

Place drained cauliflower back in bowl and add two eggs,
salt and pepper and mix well. It will be a tad runny, but you
don't want it to be liquid.

Take a handful of your mixture and spread them in
circle like shapes on your parchment paper.

Place in the oven for 10 minutes, then removed them
from the oven, flip them, and continue to
bake for another 7 minutes. Then remove from oven
and allow them to cool.

Then, add your favorite toppings and fillings
and enjoy!

Tunesday; Love

We had a bit of a strange encounter this past weekend.
Friday at work, for some reason, we started talking about
Lana Del Rey and how we wished she would do another
tour and release new music. -- We have seen her
live twice and it just isn't enough.

Well, ask and you shall recieve! To our surprise,
when we opened up our Spotify on Saturday, what
did we see, but a new single, Love, by LDR
It's mesmerizing. It may just be a single, but
our wishful thinking is hoping it's just one
of many more to come soon <3

Strawberry Vanilla Ice Cream Sandwich

Nothing quite says "I love you" like
cake + ice cream!

About a year ago we found this cute,
little vintage cast iron heart-shape dish, and are finally
finding the perfect time to use it: Galentines' Day!
We decided to treat our Gal-Pals this year with
strawberry-vanilla ice cream sandwiches.
They were really easy to make and taste AMAZING!

What you need:

1 box of Betty Crocker strawberry cake mix
Vanilla ice cream
Heart Shaped baking pan
(Similar HERE)

How to make:

Follow the directions on the cake mix to make your cake
batter. Then, spray your baking pan and pour the cake batter
into each shape. Bake for about 10-12 minutes or until
thoroughly baked. Remove from the oven, and pan and
allow to cool.
Take a knife and shave the bottoms of your hearts to even
them out. Then take your ice cream and spread it evenly between
two heart slices. It may be easier to work with ice cream if you
allow it to sit out for a minute or two to let it soften.
Icing is optional, but it certainly adds a little something
extra... and it's tasty!

Happy Gal-entine's Day!

Mini Deep Dish Pizzas

 Happy National Pizza Day!
We loved the idea of personal pan pizzas but took
it up a notch--Chicago-Style deep dish. However, we added some
St. Louis touches. We live in the neighborhood "The Hill,"
which is nationally known for it's authentic Italian restaurants,
markets and people. The pizza sauce we chose for this recipe
is from "The Hill" and we recommend this area to all visitors.
This recipe is simple and super quick, twenty minutes tops.
Enjoy!

What you'll need:
crescent rolls
shredded cheese
pizza sauce
toppings of your choice
oregano
muffin tin

How to:
Preheat the oven to 450 degrees and grease the muffin pan.
Shape the crescent roll pieces into cup of the tin. Use a
tablespoon to spread the sauce in the crescent cup. Add your
ingredients and top with cheese. Bake for 7-10 minutes and top
 off with some oregano.

 Happy National Pizza Day!
Enjoy!

Rose Gold + Marble Desk DIY

Searching for a glam desk within your budget is a lot more
difficult then we thought. We’re talking $900 outta budget. It’s
especially more difficult when you have something very specific
in mind. Our quest initially started out looking for something
in the realm of white and gold. That instantly took us down
a dark path of the “perfect” desk with an imperfect price tag.

After weeks of searching (we also have serious FOBO:
fear of better options), we decided, if you can’t
find it, make it yourself!

We did some research and found out that, a. we changed
Our minds on style (shocking) and b. it’s very easy to DIY
your desk to suite your style.

We landed on Rose Gold + Marble, and after finding a desk
In our budget, we decided to go for it!
We bought a couple cans of metallic spray paint,
ordered our marble contact paper on Amazon Prime (cause, addicts)
and went to town!

Obligatory before picture of the space and desk.

Before you assemble your desk, you want to make
sure you spray paint all the hardware and let it dry.

This is the part where it can get sticky (pun intended) so we
are including the video (below the material images)
we followed for application of your
contact/adhesive paper to your top.

Here are all the materials you will need prior:

When you are done prepping all your pieces,
it's time to assemble!

We LOVE the way it turned out. We can't
believe how good the marble contact
paper looks!

Now that the desk is complete, time to
work on the rest of the space!

Hope you found a little inspiration today!

Happy DIY-ing!
